Rancho Gordo says this can be the gateway for those who are new to, and possibly skeptical of the dried bean life, if there’s anyone out there still to be converted. These black beans pull off the magic trick of being firm but not starchy, and if you are thinking of a nice winter soup, you are in for a darker broth than you’d get from most other black beans. This bean is part of the Rancho Gordo-Xoxoc Project, which helps small farmers and producers in Mexico continue to grow indigenous crops in spite of challenges posed by market forces that threaten the variety of products that reach consumers.
